It's really not that hard. If you're using Paint, you zoom in on the sprite to make it easier to make.

i've seen people use paint, go to pick color, press the color of a pokemon and suddenly the eraser apears and when they erase a pokemon, its color changes into the color they picked before.

Oh, gotcha. That's not the eraser, it's the brush button. Use the eyedropper to choose a color, then use the brush to use it. It is basically the same as the pencil, but there are a bunch of different sizes that you can use, varying from one pixel to a small circle. The pixel comes in handy for making detail on sprites.
I think that's what you were referring to.

Jackdot: small black and white bird with a red dot on its belly. evolves into Raveline
Raveline: medium sized grey and black bird with a red belt. evolves into Croplane
Crowplane: Big black bird with a red head.

You can't just randomly stick a new pokemon between evolutions, it has to branch off a whole new evolution.
